Coffee will be impacted by the changing climate

Over 2.25 billion cups of coffee are consumed in the world each day.  Americans spend $80 billion dollars a year on coffee.  Coffee in grown across 12.5 million largely smallholder farms in more than 50 countries.  In other words, coffee is a big deal.

Like many things, coffee is subject to the effects of climate change.  Many coffee-producing regions are experiencing changing climate conditions, which don’t only affect the yield and sustainability of the crop but have an impact on taste, aroma, and even dietary quality.  Coffee drinkers care very much about these things.

New research at Tufts University and Montana State University looked at how coffee quality can be affected by shifts in environmental factors associated with climate change.  The researchers looked at the effects of 10 prevalent environmental factors and management conditions associated with climate change and climate adaptation.

The most consistent trends were that farms at higher altitudes were associated with better coffee flavor and aroma, while too much light exposure was associated with a decrease in coffee quality.   They also found that coffee quality is also susceptible to changes due to water stress and increases in temperature and carbon dioxide levels.

They evaluated current efforts to mitigate these effects, including shade management, selection of climate resistant coffee plants and pest management. The hope is that if we can understand the science of the changes to the environment, it will help farmers and other stakeholders to better manage coffee production in the face of increasing challenges.   It will take a concerted effort to maintain coffee quality as the climate continues to change.

Wine And Wildfire Smoke | Earth Wise

Wildfire smoke devastating some vineyards

Rising global temperatures have made droughts and heatwaves more common and intense, leading to larger and more destructive wildfires.   In 2020, wildfires in California blackened more than 4 million acres, the largest wildfire season on record.   With its continuing drought, California has already had 1.5 million acres burned by wildfires this year, and the fires continue.

Wildfires can cause extensive damage throughout the agricultural industry by destroying crops and killing livestock.  But the fires can have a unique effect on the wine industry:  wine grapes can be affected by smoke taint.

Vineyards have demonstrated themselves to be good fire breaks.  They definitely help prevent the movement of wildfires.  But there is no way to stop smoke from the fires from drifting into vineyards.  By far, the damage caused by smoke far outweighs direct losses from fires in vineyards.

Winemakers sometimes add subtle smoky notes to their vintages by aging them in toasted oak barrels.   But wildfire smoke permeating vineyards – even from distant blazes – can end up making wines undrinkable.  Smoke-tainted wines end up having unpleasant aromas that people describe as being like disinfectants or burnt rubber. 

With wildfires an increasingly persistent presence in California, the state’s $43 billion wine industry is facing a major challenge.  An estimated 165,000 to 325,000 tons of California wine grapes went unharvested last year, adding up to more than $600 million in losses from fire and smoke.  The industry will need to figure out ways to detect and manage smoke taint as the problem isn’t going to go away.

How to save coffee from climate change

The global coffee market is valued at over $450 billion a year and supports the economies of several tropical countries.  About 100 million farmers depend upon coffee for their livelihoods. 

Coffee bushes grow best in a narrow range of temperatures.  The existing coffee market is dominated by two species Coffea arabica and Coffea canephora, the latter commonly called robusta.  Arabica, the most preferred coffee, thrives in average temperatures between 64 and 72 degrees Fahrenheit.  Robusta does not flourish above 75 degrees.  Therefore, the warming climate is making growing coffee increasingly difficult.

There are actually well over 100 species of coffee.  Many of them grow in warmer places than those preferred by robusta and arabica, but are considered to have poorer flavors, smaller beans, and lower yields.

Researchers at the Royal Botanic Gardens in Britain came across a paper written in 1834 about a species of coffee from the lowland hills of Sierra Leone called Coffea stenophylla.  According to the paper, stenophylla supposedly has a flavor superior to arabica’s. 

It turns out that stenophylla still grows in parts of Africa with temperature ranges between 75 and 80 degrees.  It was actually farmed until the 1920s but was abandoned because robusta was found to have higher yields.

Extensive taste testing verified the positive attributes of stenophylla.  Whether it should be cultivated directly tolerating potential yield issues or crossbred with existing commercial coffees remains to be determined.  But the prospects for finding more heat tolerant coffees should be encouraging news for coffee addicts.

Cell-Based Meat And Seafood | Earth Wise

Reimagining meats and seafood

We have heard about laboratory meat for a number of years, generally in terms of something that may happen at some point in the indeterminate future. But at least for a couple of California companies, that future is now.

These high-tech companies are producing products – real meat and seafood – that are originally cultured from animal cells but are made without the actual animal.

San Francisco-based Eat Just makes chicken nuggets that have recently gained regulatory approval in Singapore and are now available to order at a downtown restaurant.  San Diego’s BlueNalu creates cell-based seafood fillets including yellowtail, mahi-mahi, red snapper, and tuna.

The companies use stem cells obtained from actual animals and cultivate them in steel tanks with the same nutrients that living animals consume.  The original cell donor is not sacrificed.  The harvested cells multiply and are eventually shaped to form meat or fish that cooks, looks, and tastes just like its natural counterpart.

The “mouth feel” of conventional meat or fish can be mimicked by recreating the same proportions of muscle, fat, and connective tissue in the cell-based product.  Eat Just says their product cooks, looks, and tastes like chicken because it is chicken.  BlueNalu says their product has all the same characteristics as fish because it is fish.

These products have major environmental, safety, and ethical advantages.  The big question is whether people will eat them.  Is there an “ick factor” to overcome?  Ultimately, the key thing is how they taste.  If they pass muster on that score and cell-based meats and seafood are scaled up and accepted, we can have the nutritional and sensory advantages of meat proteins without the environmental, ethical and safety disadvantages.

Foods of the Future? | Earth Wise

In a world where many go hungry in the context of rapidly changing environments, many experts contend that alternative food sources will be necessary to solve global food security problems.  So-called novel food sources are central to this conversation, defined as foods with no history of consumption in a region – or perhaps anywhere.

Three popular examples are lab-grown meat, insect farming, and seaweed aquaculture.  Each of these offer opportunities as well as challenges.

Lab-grown meat can refer to actual animal tissues raised in vats as well as the increasingly common cultured plant products made to resemble meat.  Lab-grown meat faces push back from the livestock industry that contends it should not be labeled as any kind of meat. While results to date are positive, barriers still remain including concerns over product taste, healthiness, and cost.  And while less land- and water-intensive than conventional livestock, cultured meat production is still energy intensive.

Insects do form a significant part of diets across the globe but have yet to be embraced in any substantial way in western cultures.  Nutritionally, numerous species of insects are rich in key proteins, micronutrients, and minerals.  But the “yuck factor” is a big barrier to cross.

Seaweed is a long-established part of many East Asian diets and has many potential dietary uses.  Several selectively bred varieties of seaweed supply a range of valuable nutrients.  Growing seaweed does not tax freshwater and terrestrial resources.  But intensively cultivated seaweeds would have potential negative effects on local marine ecosystems.

There is no single solution to complex issues like food security.  Novel foods may very well form part of the solution to a growing food crisis.

Protecting Canola Crops From Frost

Canola is one of Canada’s most valuable crops.  In fact, Canada is the world’s largest exporter of canola oil.  The international market for canola oil is $27 billion a year.  The oil is very popular because it has a relatively low amount of saturated fat, a substantial amount of monosaturated fat, and is very neutral tasting.

Canadian canola farmers worry a great deal about late season, non-lethal frosts because the frosts prevent chlorophyll – a photosynthetic pigment in the seeds – from breaking down, a process they call “degreening”.  The farmers seek to have high-quality yellow embryos at seed maturity.  When the harvest contains more than 2% of green seeds, it can no longer produce Grade No. 1 quality oil.  When green seeds are processed to extract canola oil, the chlorophyll in the seeds reduces the oil’s storability and quality.  As a result, farmers receive a lower price for frost-damaged green seed canola.  This costs Canadian farmers and estimated $150 million annually.

Researchers at the University of Calgary have developed gene-based technology to produce canola plants that can withstand late-season frost and still produce high-quality seed.  They identified a specific protein that controls chlorophyll breakdown and seed maturity.  Genetic manipulation is able to enhance the seed degreening system.  They were able to reduce the amount of chlorophyll in the genetically modified canola lines by 60% after the plants were exposed to non-lethal frost. 

Ultimately, the researchers plan to develop a method to incorporate the modification into canola hybrid lines in such a way that it will be readily accepted by consumers concerned about genetically modified organisms.

The Bitter Truth About Caffeine

Black coffee has a bitter taste. Bitterness evolved as a natural warning system to protect the body from harmful substances.  By the logic of evolution, we should therefore want to spit coffee out, but obviously it doesn’t work that way.

Caffeine itself has a particularly bitter taste.  Surprisingly, a new study at Northwestern University has found that the more sensitive people are to the bitter taste of caffeine, the more coffee they drink. That sensitivity is actually a genetic variant.

So, one would think that people who are especially sensitive to the bitter taste of caffeine would drink less coffee.  The counter intuitive result suggests that coffee consumers acquire a taste or an ability to detect caffeine as a result of the learned positive reinforcement (in other words, the buzz) elicited by caffeine.  People with a heightened ability to taste coffee’s bitterness learn to associate good things with it.

The study also found in contrast that people sensitive to the bitter flavor of a different compound called 6-n-propylthiouracil (known as PROP)avoided coffee as well as red wine.

The study made use of applied Mendelian randomization, a technique commonly used in disease epidemiology, to test the causal relationship between bitter taste and beverage consumption in more than 400,000 men and women in the United Kingdom.

These results shed some light on the disdain many coffee drinkers have for decaf coffee.  It may not be just the lack of buzz that turns them off.  Some of them with the right genes may be missing that extra bit of bitterness that alerts them that something good is about to happen.
